Ingredients: 1 lb ground chicken, peeled and diced 3 Tbsp.
flour 1 Tbsp ground black pepper 1 Tsp.
ground coriander 1 Tp. salt 1 cup shredded carrot 1 TSP.
cayenne pepper 1 tsp.
garlic powder 1 tsp of cayiao 2 cups chopped tomato 1/2 cup chopped green onions 1 tsp peppermint extract (optional) Directions: Place the chicken in a bowl, cover with a lid, and let stand at room temperature for at least 20 minutes, or until tender.
Drain, pat dry with paper towels, and place in a food processor.
Pulse until the chicken is very finely chopped.
Add the flour, pepper, and corianders.
Pulse for about 30 seconds.
Add salt, cayiander, and garlic powder.
Pulse again until combined.
Add chopped tomatoes, and blend until the tomatoes are very finely crushed.
Add cayuais pepper, diced green onions, minced garlic, and diced peppermint.
Process until all the ingredients are incorporated.
Pour the chicken mixture into the bowl of your food processor, pulse to combine, and pulse for 5 seconds.
Transfer the mixture to a medium bowl.
Cover the bowl with plastic wrap and refrigerate for at leas day.
If the chicken isn’t too tender, you can leave it in the bowl for another 30 minutes, but it’s still best to serve immediately.
Serve with a scoop of fresh mozzarella cheese.
Notes: The “pizza” part is referring to the chicken.
It is served with some mashed potatoes.
It’s delicious with the mashed potatoes!

You could also make this with chicken, and I’d bet that it’s not as bad.
You just need to find the right ratio of salt to pepper to make it the right consistency for your liking.
